Sustainable Sourcing

We only use the freshest, highest-quality ingredients while supporting local and sustainable food producers and we work with suppliers who follow this ethos to reduce the food miles on our produce.

We plan seasonal menus to ensure that the food we prepare is being cooked at the time of year it was meant to be. By working with ingredients that are in season, we reduce the environmental impact of out-of-season produce and deliver meals that are fresher, more flavourful, and better for the planet.

Suppliers

We work with suppliers who share our commitment to sustainability and who incorporate eco-conscious practices into their operations, from ethical sourcing to waste reduction.

We are particularly highlighting our greengrocers, Rushton’s for their exceptional efforts in reducing food miles, using eco-friendly packaging, and supporting charitable food donations.

Rushton’s actively reduces environmental impact by sourcing produce from a vast network of British growers, minimising food miles and associated carbon emissions. They also prioritise eco-friendly packaging, using 100% compostable bags for loose items.

They also collaborate with organisations like City Harvest to donate surplus food, ensuring it reaches those in need and stays out of landfills.

Reducing Waste

Food waste is one of the biggest challenges in the hospitality industry, and we are actively working to minimise it. We carefully plan our menus to prevent food waste and we monitor portion sizes, use every part of the ingredients we source, and ensure that any surplus food is utilised or donated where possible.
